I like this pickle more than the instant version. My mom calls this as "Vathakina manga oorgai" means "Sauteed mango pickle". This tastes in between a thokku & oorgai. It can be done very quickly and it tastes great for curd rice.

Instructions to make Chatpta pickle (Piquant pickle of raw mango):
  1. First wash and peel all the mangoes cut in any size or shape with knife.
  2. Now in a deep vessel take water for boiling the mangoes, only single boil comes off the gas and drain all water from Mangoes. Now in a same pan pour bolied Mangoes sugar and 1/2glass water cover it with lid and keep aside for 1/2 hour.
  3. Now roast dry spieces and grind it in mixer.(not Smooth like a powder)
  4. The sugar must have almost melted.After half an hour take pan on the gas and mix it well with the help of spatula.when it starts boiling sprinkle salt to taste red chilli powder and turmureic powder and grind spieces stir occasionally. Sugar also realeses water it will take time to cook.cook until water reduce and don't make it too thick otherwise when it cools down it become too dry.
  5. For better result Cook well. now your sweet sour and spicy pickle is ready.keep in air tight container.
