One of my all time fav pickle is mango pickle, after having tasted punjabi and gujrati aam ka achar my palate started craving for some Maharashtrian pickle.   1. First soak Raw mango in water for over night and dry it properly before cutting it into bite size pieces. This will stop process of ripening
  2. Now marinate these pieces with turmeric, salt and spread it on cotton sheet so all water will drain and soak in sheet. Be carefully. This may ruin flooring.
  3. Take all other ingredients except salt and oil and slightly grind it in mixer. Don't make it powdery.
  4. Now take all pieces in one large bowl or kadhai. Add grinded mixture in it. But dont mix it.
  5. In another kadhai heat oil. As soon as it starts boiling, slowly pour it on ingredients mixture. Now mix it slowly. Add salt in it. Its always recommended to add little extra salt as salt works as a preservative.
  6. Let it get cool. Store it in air-tight jar. And use it atleast 2 days later.
