The ingredients needed to make Tomato and Corn Relish:

  3. Prepare 1 cup white sugar
  4. Make ready 1 cup white vinegar
  5. Take 1/3 cup malt vinegar
  6. Take 1 1/2 tsp mustard powder
  7. Prepare 1 tsp salt
  8. Make ready 250 g can sweetcorn kernels
  9. Get 1 tbsp water
  10. Make ready 2 tbsp cornflour

Stand corn in a wide shallow bowl; using a sharp knife, slice downward to release kernels. Combine vinegar, sugar and salt in a large saucepan. Bring to a boil, stirring to dissolve sugar. Add corn, red and green peppers, celery, onion, mustard, celery seeds and turmeric.

Instructions to make Tomato and Corn Relish:
  1. Combine tomatoes, onions, sugar, vinegars, salt and mustard powder in a pan. Bring to a boil, reduce heat and simmer for 1 hour. Stir the mixture occasionally.
  2. Add in the corn and simmer for another 20 mins
  3. Combine the cornflour and water to form a slurry. Add to the corn mixture and bring to a boil. Reduce the heat and allow to simmer till thickened slightly.
  4. Transfer to sterilised jars and allow to cool. Then refrigerate and enjoy!.

Remove from heat, then sprinkle with red pepper flakes and sherry vinegar. Fold in cilantro and season to taste with salt and pepper. Do the same with the red and green bell peppers and the celery ribs. Remove the husks and silk from the corn and cut the kernels off the cobs. In a large saucepan, combine all of the ingredients.
