Steps to make Madeleines:
  1. Melt the butter nicely. Dont burn it.beat eggs and sugar together till mixture is airy and frothy. No sugar granules should remain.
  2. Sift together Flour, salt, Baking powder in a bowl. Add sugar mixture to bowl and fold it with wooden spoon. Add vanilla essence, lemon juice & zest in it. Take 1/4 cup of batter and add into melted butter. Let it incorporate. Then gently add rest of the batter in butter and fold well.cover the bowl with cling film and keep in refrigerator for 1 hour. (must follow this step)
  3. Madeleines are baked in pattarned pans called Scallop Pans.i hv used silicone Scallop pan. Yet other scallop tins can equaly be used. Grease the pans with melted butter and flour generously. Special shape of Madeleines comes from these scallop pans.
  4. Preheat the oven to 180°c. Take out the batter aftr an hour. Pour a spoon full of batter in each scallop cup. Lightly tap the pans on hard surface so that batter should be evenly filled and no airbubbles. Keep in oven at 180°C for 10 minutes. Check, the madelines should be rising from middle. Press lightly in the centre. Flip one to check the base. It should be turning light golden. Keep them for 5 more minutes. Take out 1 and check. It should be firm from top and crisp golden from base.
  5. Turn off heat. Leave to rest for 5 minutes. Flip all on cooling rack. Sprinkle confectioner's sugar on top while thy are warm.Madeleines are usually serve hot from oven with tea. Enjoy French Classic Madeleines with Tea and cookpad.
