Season both sides with salt and pepper. Heat a large ovenproof skillet over high heat until hot. Add remaining tablespoon oil; heat until hot but not smoking. Transfer to ovenproof plate and place in oven to keep warm.

  1. Wash and dry chicken and potatoes. Put in a roasting tin. Add chopped onion, chopped chorizo, oil, salt and oregano. Mix well and cook at 200 for about 1 hour.
  2. Mix half way. Serve with the sauce :)
