  1. Take 1 onion
  2. Take 1 red chilli
  3. Take 1 pepper
  4. Prepare Chorizo
  5. Prepare 10-15 jersey royals (or other baby potatoes)
  6. Prepare Tin chopped tomatoes
  7. Prepare 2 cod fillets (or any white fish)
  8. Take Olive oil
  9. Prepare Fresh basil

Blitz together the parsley, oregano, bread and remaining oil to form coarse breadcrumbs. Cook the chorizo over a medium heat for a few minutes, next add the potatoes and sprinkle the paprika over, continue frying until the potatoes start to crisp on the edges while stirring every so often. Divide the potato and chorizo mixture between your plates, top with the cod and serve. Cod and Asparagus with Tomato Vinaigrette.

Instructions to make Cod, chorizo and potato:
  1. Drizzle some olive oil into a large deep frying pan, heat on a low heat.
  2. Dice the onion, chop the pepper and chorizo into chunks and slice the chilli. Throw all into the pan and stir fry for 5 mins
  3. Quarter the potatoes and add them to the pan, fry for a minute and add the tin of tomatoes.
  4. Stir well then add the two fish fillets. Season to taste and cover for 7 minutes, turn the heat down to a simmer.
  5. Serve with green veg and top with shredded fresh basil
