- While still hot, grate some more lemon zest over the top as a garnish. Allow to fully cool before removing from the baking dish.
I was really worried it wouldn't set, as the mixture is quite "loose" once mixed. Put thin slices of stem ginger and its syrup in the filling with the lemon.
