- Prepare 1 tbsp sprouted lentils
- Make ready few pickled green strawberries
- Make ready 1 pickled walnut, sliced
- Make ready 1 avocado, chopped
- Prepare 2 tbsps herbs, mint, Greek basil and chives
- Make ready Dressing
- Take 1 tbsp pickling liquid from the walnuts
- Prepare 1 tbsp good quality balsamic vinegar
- Get smidgen of wasbi
Use fresh pigs feet for the best results. Each jar should be thoroughly cleaned to a sterile condition. Give the pigs feet a good washing. For presentation purposes burn off any hair that you observe.
Steps to make Pickle Pig:
- Place the cheese, black pudding, shallot, potato and sauce in a bowl and mix together. Dust hands with flour and mould into cylinders. There should be enough to make 10 croquettes. Dust the croquettes with flour, dip in the beaten egg and then the panko breadcrumbs to coat completely. Heat the oil in a frying pan over medium heat. Shallow fry the croquettes, turning on all sides until crisp and golden brown and drain on absorbent paper.
- Whisk the dressing ingredients. Mix all the salad ingredients together, drizzle with the dressing and serve alongside the croquettes.
