  1. Peel and cut potatoes in cubes/small piece. In 1/2 cup warm water soak poppy seeds for 5 minutes.
  2. Heat oil in a pan, add nigella seeds. Add potatoes and stir. Add turmeric,red chilli and cumin powder. Mix well cover and cook on low flame for 5 minutes.
  3. Meanwhile wet grind poppy seeds along with green chillies to a smooth paste.
  4. Now add poppy seed paste to potatoes, stir and add 2 cups water. When boiling starts, add salt.cover and cook on medium-low flame for 15 minutes or till potatoes are soft. Adjust gravy. Gravy should neither be too thick or too thin, so adjust it.
  5. For tempering heat oil in a pan, add slit green chillies and chopped coriander leaves. Remove from flame at once. Add to potato.
  6. Aloo posto is ready to serve. Serve with puris/parathe/rotis.
