Next add in peanut sauce and chicken; stirring to coat veggies. Reduce heat to medium low and cook for another few minutes until sweet potato noodles are al dente. Add the sweet potato and mushrooms and a splash of water, cook until the sweet potato noodles are soft. Meanwhile, whisk together the sauce ingredients. In a small bowl, whisk together the cornstarch and water.
