  1. Pause the tomatoes and pepper in a blender until purée. Transfer to a pot on a stove top, cover and allow to cook until the water content is dried off.
  2. Heat up a pot, add oil,the cooked tomatoes and pepper mixture. Fry for about 5 minutes, add melon and continue frying for another 5 minutes, then add the crayfish and fry for 2 minutes.
  3. Add meat stock, water, chicken bouillon, 1/2 tsp salt, stir to combine and bring to a boil.
  4. Reduce heat to low and allow to simmer for 30minutes. Stir in dried bitter leaves (washed and cut into smaller sizes), cover and allow to simmer for additional 5 minutes. Serve with cornmeal or any choice of carb. Voila!
