- Take 200-300 g Scallops

I am very fond of 'Takikomigohan' which is seasoned rice cooked with vegetables, mushrooms, seafood or chicken. Takikomi gohan (炊き込みご飯, 炊き込み御飯) is a Japanese rice dish seasoned with dashi and soy sauce along with mushrooms, vegetables, meat, or fish. The ingredients of takikomi gohan are cooked with the rice; in a similar preparation, maze gohan (混ぜ御飯). Takikomi gohan is a Japanese rice dish cooked with soy sauce, dashi stock, and various ingredients such as mushrooms, vegetables, and meats.
Instructions to make Scallops Enoki Takikomi Gohan:
- If you use Frozen Scallops, thaw them thoroughly. Place scallops in a bowl, add a pinch Salt and Sake and massage. Set aside while you are preparing Rice and Enoki.
- Wash Rice by stirring it thoroughly in water with your hand and drain the water. Repeat this a few more times until water flows through clear.
- Drain the rice and put it into the rice cooker’s inner pot. Add the Dashi Stock and Soy sauce. Place Ginger and Enoki, then Scallops on top. DO NOT stir.
- Press ‘COOK’ button to start cooking.
- When the rice is cooked, let it steamed for 10 minutes. Then loosen and mix gently.
- Sprinkle some chopped Spring Onion and Shichimi (Japanese Chilli Spice Mix) over. Toasted Nori and Toasted Sesame Seeds are also yummy with this dish.
This dish is easy to prepare since there is no hard rule on which ingredients to use. For this recipe, I use three kinds of mushroom, shimeji, enoki, and shiitake. Takikomi gohan mixes vegetables and meat (sometimes even seafood) with short-grain Japanese rice. That said, it's quite common to use Japanese mushrooms like shiitake or enoki - along with carrots and burdock root. Proteins like chicken thigh and aburaage (deep fried tofu pockets) are great.
