  8. Get 75 g/2 3/4 oz unsalted natural peanuts,chopped

To freeze before baking, line a sheet pan with foil and then add the balls of cookie dough. Press with a fork to make cross-hatch marks, and then freeze until solid. In a large bowl, mix all ingredients. Scoop level tablespoonfuls and roll into balls.

Instructions to make Peanut Butter Cookies:
  1. Lightly grease 2 baking trays (cookie sheets).
  2. In a large mixing bowl,beat together the butter and peanut butter.
  3. Gradually add the sugar and beat well.
  4. Add the beaten egg a little at a time until it is thoroughly combined.
  5. Sieve (strain) the flour,baking powder and salt into the peanut butter mixture.
  6. Add the peanuts and bring all of the ingredients together to form a soft dough.Wrap and leave to chill for about 30 minutes.
  7. Form the dough into 20 balls and place them on to the prepared baking trays (cookie sheets) about 5cm/2 inches apart to allow for spreading.Flatten them slightly with your hand.
  8. Bake in a preheated oven,190 oC/375 oF/Gas Mark 5,for 15 minutes until golden brown.Transfer the biscuits (cookies) to a wire rack and leave to cool.

In a large bowl, cream together sugar and butter. Mix in peanut butter and vanilla until smooth and creamy. Add the rest of the ingredients. Roll into balls and press down with a fork dipped in sugar or flour. If you prefer a more crumbly, shortbread peanut butter cookie – look no further!
