  2. Prepare 1 Onion

  1. Press Tofu (I used heavy shopping but a teatowl and heavy Novel also work I'm told)
  2. Chop Onions, Garlic, Pepper and Tofu
  3. Fry some onions in some vegatable oil for a couple of minutes
  4. Add Garlic and Sliced Pepper to frying pan
  5. Add Satay Sauce and the chickpeas. I like to increase volume of the sauce with a bit of water. (This sauce comes with pumkin seeds rather than peanuts but is equally as yummy!)
  6. Fry in the pan for ten minutes or while the grain cooks. Can wilt some spinach in there too! Let the Tofu suck up all those lovely flavours!
  7. Serve over rice or equivalent and enjoy!! 😋

Add tofu and cook, stirring, until browned. Add veges back into pan, add coconut milk mixture and ½ cup water. Bring to a simmer and cook for a few minutes until curry sauce has thickened slightly. Add coriander at last minute, then remove from heat. Drain and press the tofu to remove excess moisture and water.
