The ingredients needed to make Thandai:
  1. Take 3 tbsp almonds
  2. Get 1 tbsp cashew
  3. Take 1/2 tablespoon fennel seeds
  4. Take 1/2 tablespoon melon seeds
  5. Get 1 tsp black pepper
  6. Prepare 1 tbsp pistachio
  7. Prepare 1 tsp poppy seeds
  8. Get 4-5 cardamom
  9. Get as needed Saffron
  10. Prepare as needed Conserve of rose petals (gulkand)
  11. Get 300 gm sugar
  12. Prepare as needed Water

It is a traditional drink, popular in the northern parts of India. Its made with a mix of dry fruits, seeds and a few spices. Thandai is a traditional drink popular in UP and some parts of Rajasthan. It has a cooling effect on the body and hence the name Thandai.

Steps to make Thandai:
  1. Take a bowl and add given amount of ingredients such as add almonds, cashews, melon seeds
  2. Now add fennel seeds, black pepper, poppy seeds and cardamom and saffron (only 2 pinch)
  3. Mix all these ingredients
  4. Soak it for four hours in hot water. If you are using cold water then the mixed ingredients need to be soaked more than 7 hours..
  5. Now after 4 hours we will put the mixture in the jar
  6. With this mixture add conserve of rose petals(gulkand) in it..
  7. Make a smooth paste of this mixture in jar..
  8. Now keep the paste aside for some time
  9. Now take a open big pan and add 300gm sugar in it
  10. Add 250ml water to it and also saffron strands into it
  11. Cook it at high flame so that sugar completely mix with water
  12. Now add the paste into it
  13. Cook it for 5-7 minutes at medium flame
  14. After 5-7 min it will become thick, add 150ml water to it
  15. And now cook it again for next 5-7 minutes..
  16. Now it will be ready after next 7 minutes with proper consistentcy
  17. You can store it in a glass jar or bottle for a month
  18. For serving take one glass and add the thandai into it
  19. Now add milk into it
  20. Mix it using a blender or as you like
  21. Serve it by garnishing it with pistachio..

Prepared with milk and a lot of dry fruits, this drink is very refreshing, and a perfect summer cooler. Thandai is a perfect Holi recipe to relish and what makes it indulgent is the amalgamation of ingredients like milk, almonds, saffron strands and sugar in the right proportions.
