- Finely chop and sauté the onion and garlic.
- In a food processor, blitz the chickpeas.

- Add in the water a bit at a time until the mix binds together and holds its shape. It'll have a tacky texture but you don't want it too wet.
- Divide into 10-20 pieces, depending on the size of sausage you want.
- Roll out each piece into a sausage shape and wrap up in foil. Twisting the ends like a sweet wrapper.
- Place in a steamer and steam for 40 mins.
