- Prepare 1 teaspoon cumin, roasted
- Make ready 1 teaspoon stars anniseed
- Take 1/2 nutmeg
- Get 10 red chillies
- Take 3 big shallots
- Get 3 cloves garlic
- Prepare 1 teaspoon chopped turmeric
- Take 2 teaspoon chopped ginger
- Prepare 1 tablespoons salt
Kari Ayam is what they call this in Malaysia, in English simply Chicken Curry. It is a dish made out of chicken usually the bony parts like ribs, wings, thighs and legs marinated in a spice blend of chillies, ginger, garlic, lemon grass, shallots, belachan and candlenuts cooked with coconut milk together with. Add chicken, and cook until no longer pink. Add thin coconut milk and the rest of the ingredients.
Instructions to make Chicken Curry (Kari Ayam):

- Rub chicken with lime or tamarind juice and salt, and let it stand for 15 minutes. Heat oil and saute shallots until golden brown, than add ground spices, whole spices, lemon grass, pandanus leaves, curry leaves and chicken.
- Cook for a few minutes, than add coconut milk and pounded coconut. Continue to cook, stirring from time to time until the chicken is cooked and the gravy is thick and oily.
- Serve with Rice or any bread ππ
Bring to a boil, reduce heat, and simmer until chicken is tender and the sauce has reduced and thickened. Turn off heat, transfer to a serving bowl, garnish with deep fried shallot flakes, and serve with steamed. Kari Ayam is another chicken curry I tried from Malaysian cuisine.
